Zucchini-Chocolate Chip Muffins

I tried out this recipe for zucchini-chocolate chip muffins.  I think the cinnamon and lemon juice is what makes this recipe so gosh darn delicious.  I also added a few pinches of lemon zest for an additional lemony dose.  I have A LOT of zucchini in the garden, and would love to make more.  Sadly, I don’t have any more vegetable oil, it’s as if I’m not Filipino.

 

Expedition Health – Stride

We love going to Denver’s Museum of Nature and Science.  On today’s adventure, we went to the museum’s Expedition Health exhibit.  You can create your personal profile and there are a variety of interactive stations where you can learn about your heart rate, arm span, height, etc.  River’s favorite (or it may be my favorite) is the station that measures your stride.  You walk across the designated path and then you can see your stride length and speed, and then compare to others on the video screen.  I love River’s little walk and had to share it.

Grand Tetons

We decided to road trip to Tahoe for the family reunion / Len’s baby shower. On the way, or really way out of the way, we stopped at Grand Teton National park. I’ve been to a lot of national parks, but this was my firs time here. It was pretty awesome. The trip was whirlwind reminiscent of the trips my Dad took us on when we were younger. Luckily Darlene shares my enthusiasm for exhausting road trips. River was great and pretty easy the whole time. We did break down and buy a portable dvd player so he could watch Tangled and Curious George while he wasn’t sleeping. It was a good choice.
